I can’t lie, it feels pretty great writing right now…We’re approaching mid August and summer is coming to an end. For some reason, today was ALL about Fall season. All I could think about was Fall candles, hot beverages, good books to read, shows to watch (I am re watching Gossip Girl for the tenth time, don’t judge me.) Point is, I am quite excited for this upcoming season.

Last time I posted, I talked about moving to Virginia and everything that had happened in 2016. Time flies, I swear…like more than half the year is over already and here I am, thinking about 2018. Okay, let’s take a step back for a second…

It’s clear by now that you know I am all about mental and physical wellness. I am 24 years old and every year that passes by, I look for more and more ways to expand my knowledge and feed my brain. Over time, I have changed some things to make my every day life a bit less stressful, such as eliminating meat from my diet and practicing meditation & yoga. Let me tell you right now, BEST DECISION EVER. I know what you’re thinking you meat lovers out in the world did you do that? It took time and honestly, I had to- but we will get into that another day. I am young, but every day passes by so quickly that I constantly find ways to improve my life. Today I am here to talk about self care. Probably one the most important things people don’t pay attention to as much as they should. I am not talking about just looking pretty but feeling amazing. I know, I get it, work takes up most of your time…you push things to the next day…more important things need to get done…I have said it and heard it all. I can’t even begin to explain how beneficial it is to take care of yourself inside and out. Think about it, you need energy to go to the gym, to have a productive day at work. You need to be mentally healthy to do the things you have to do on the daily.

Let me help you out a bit. Ask yourself these three questions: What relaxes me? What puts a smile on my face instantly? Would I rather be alone or with a friend?

Now that you’ve asked yourself that, think about the things that you can do that relaxes you, that makes you happy, alone or with a friend. Some people prefer to be around others to feel good and that is great! I on the other hand, I like to be alone when I want to relax. Possibly enjoy a glass of Pinot Grigio and listen to music or write. After my work day was over, I tied up my hair and put on a charcoal mask. Detoxing, my favorite! I did pour myself a glass of wine and began writing…There are so many ways to just unwind. Let your mind wander, let go of any tension.

One thing I had mentioned was my lifestyle when it comes to eating. I can’t lie, at first it was a diet due to some health issues going on, but now I absolutely am okay with not eating meat. I made this amazing Pad Thai yesterday for lunch, definitely a surprise there since I do not cook whatsoever. Let me tell you, it only took me 15 minutes to make and included things I already had in my fridge. Totally spontaneous, but SO good! Of course I will share the recipe with you, you will not be sorry.

Pad Thai recipe:

  • Rice Noodles
  • Spinach
  • Red, yellow, orange peppers- diced
  • Radish
  • Tofu (or you can replace it with grilled chicken)

Soak rice noodles in a bowl of hot water for 10 minutes (or until softened). While you’re waiting, use a frying pan and add the cubed tofu. Let it cook for 5 minutes until slightly brown- not burnt like mine. Then, drain the rice noodles and add it all to the pan along with the peppers, radish and spinach. Add soy sauce and teriyaki sauce; let it cook for 5 more mins. You are ready to eat!

Side note: if you are using meat instead, you may want to cook that first since it does take a little more time than tofu.

I had to share that with you all because it was filling and delicious. I really want to talk about meditation and yoga, but I think I will dedicate an entire post on it since there is a backstory and would like to explain it in more detail.

So let me ask you this. What are some things that make you happy in life? Have you spent time with your loved ones lately? Do you need to add/change some things in your life to increase your happiness? If so, what is the first step?
